THE WILD LAB
Sharing good food with my loved ones is one of the greatest joys of life for me, so it was hard not to like The Wild Lab. My friend Elena and I met there for brunch and a much-needed catch up and both agreed we would be coming back for more soon!
The first ethical concept store in Brussels is split in two parts: the Wild Food where you can enjoy healthy dishes and Everybody Agrees where you can treat yourself to a little shopping while supporting sustainable brands. We arrived early, as there only a few seats and they don’t take reservations, and first checked out the store. Katherine, one of the two ladies behind The Wild Lab team, was already selling online sustainable clothing and accessories, so this is where all the brands she is working with are displayed in a physical store. The entire collection is eco-friendly, sustainable and mostly vegan, and I have to say, a lot of the pieces were really nice. I only wish we had more such shops in Brussels!
And then it was on to brunch! The brunch menu is set and consists of a warm drink, a fresh juice, a savoury option and a sweet treat. All made by Stéphanie, the other half of The Wild Lab duo, with local, organic ingredients. We both went for a coffee, a green juice, pancakes and chose different savoury dishes: egg bowl for me and avocado on toast with egg for Elena. The pancakes were amazing and so was our juice. Simple, filling and healthy – slow food at its best and for a fair price too. I think you’ll love it whether you’re a vegetarian or not. The Wild Lab also offers breakfast (think chia puddings, acai bowls, french toast and eggs) and lunch (buddha bowls, hummus toast and sandwiches), which I haven’t tried yet. Judging from the brunch though, I suspect they will also be as yummy! I also suspect it may become one of my favourite spots for a healthy lunch in Brussels!
