Pardon, mais where can I get the best waffles in Brussels? This is one of the most asked questions from people who visit Brussels for the first time. Well, I’m happy to report that I have found my new favourite spot for waffles in town. And I’m sure that if you try it, you’ll fall love with Brussels a little bit more!
Marla and Robert, the lovely owners of Pardon Brussels, started as graphic designers but always dreamt about opening their own cafe. After a few years of barista training and a lot of planning, they finally opened their little corner in Saint-Gilles. The atmosphere is relaxed and welcoming, and the space is filled with details that give it character: lots of plants (which reminded me of my mini urban jungle), design items, exposed brick walls and wooden chairs.
Marla is the barista while Robert is behind the kitchen – both ready to serve you with a smile using the best seasonal ingredients, organic and mostly locally sourced. This is reflected in the prices but the quality is there. My partner in crime and I went for coffee and a different dessert each – cake for him and a waffle for me. We both agreed that the coffee, which comes from Belga & Co (the best coffee spot in Brussels at the moment in my view), was excellent! So were our sweet treats: cake and a delicious waffle with whipped lavender cream and poached mirabelle plums from Lorainne where Robert and Marla come from. I was actually really impressed with the waffle which was fluffy and super light – definitely something to try when in Brussels! Next time I’d like to try one of their smoothies and of course, their savoury waffles for lunch.
Parson Brussels, but I think you got yourself a sweet little spot for authentic, quality waffles – just what we were missing!
