L’ECLAIR DE GENIE
Somewhere in between the macaron and cupcake craze, the éclairs are making a come back! It’s no secret that the French have a long-standing love affair with this pastry. I mean, cream-filled pâte à choux plus a chocolate icing on top – what’s there not to like? And these Frenchies know a thing or two when it comes to sweet treats!
The classic éclairs have been redesigned and taken to a whole new level by chef Cristophe Adams, the man behind the pastry shop L’Eclair de Genie in the Marais. Christophe Adamas had been creating the famous éclairs of Fauchon for 10 years before starting his own business. His eclairs resemble little works of art; almost too pretty to eat! Imagine smooth choux with colourful shiny glazing, generous filling and high-quality ingredients. Despite their somewhat high price (around 6€ each) and the fact that you won’t find the classic chocolate ones, the innovative flavour combinations will make you going back for more! My favourites were the salted butter caramel one, the “Passion-Framboise” filled with a rich passion fruit cream and topped with fresh raspberries and last but not least, the éclair Vanille Noix de pécan with Madagascar vanilla cream filling and sprinkled caramelized pecans.
So, next time you find yourself strolling around the Marais between brunch and shopping, make sure you stop by L’Eclair de Genie – you’ll never see éclairs in the same way!

November 4, 2013 at 14:50oooh they look so tasty. When macarons cost 4 euros, 6 for an eclair seems “reasonable”. I wonder what flavor the green one is!

November 4, 2013 at 15:35The green one is filled with pistachio cream and topped with pistachio glaze and orange chunks. That’s the main issue with that shop; it’s extremely hard to narrow it down to a couple of éclairs because they all look adorable! 🙂
